Tommy Moloney’s Sweet Italian Sausage is seasoned to perfection with sweet basil and other spices to provide a unique flavor that the whole family will enjoy.
1. 1 lb. of Tommy Moloney’s Sweet Italian Sausage
2. 1 large chopped onion
3. 1 lb. of potatoes
4. ¼ cup of chicken stock
5. Salt and pepper
6. 1 8oz can of pinto beans
Peel the potatoes, cut large dice and parboil them for 10 minutes.
Take the Tommy Moloney’s Sweet Italian Sausage and form into quarter size meatballs. Sauté the sausage meatballs until browned on the outside in a heavy bottomed pot.
Then, add the chopped onion and sauté until translucent.
Add potatoes and chicken stock to just barely cover all ingredients. Simmer this for 10-15 minutes until the potatoes are cooked through.
Add the pinto beans, check seasonings and cook for 5 minutes, or until the potatoes start to disintegrate.
