Made from Tommy Moloney’s award-winning recipe, they may be called Breakfast Sausage, but there’s no rule you can’t enjoy these links any time of the day.
Product Information & Preparation Instructions
On the Stove
Place the sausage in a pre-heated skillet with cooking oil or butter.
Keep turning the sausages until golden brown on all sides.
Approximate cooking time | 5 minutes
On the Grill
Our recommendation is to poach them first. By covering the sausages in cold water on the stove top and slowly bringing them up to 150°F in their water bath, you can get them cooked perfectly evenly from edge to edge on the grill.
Grill slowly on the warm side of a grill and then transfer to a hotter side to give them the crisp, charred outside.
You may find that even with the par-poaching technique, a minimal amount of ripping will occur on the skin when you transfer it. This is ok since the interior of the sausage is already cooked and the protein matrix is holding the fat and other juices in place.

These breakfast sausages are the best! I stopped buying Irish sausages from my local Irish store when I discovered these. I just bought two cases in October (with some black & white pudding) to share with family and friends. I am now ordering another case as with 7 grandchildren who love them (as do their Moms & Dads who drop them off for babysitting) I’m flying through the packages. I also give these as gifts to my family at Christmas …so don’t ever stop making them 🙂 In the summer I use the cocktail sausages with a strip of crescent roll to make ‘Irish Pigs in a Blanket’ P.S. If I forget to defrost the night before I can cook from frozen ..just takes a little longer.

I’m wondering if your associates decided to make a sausage with more rusk. You kindly had told me you’d bring it up in your next meeting. It’s easy to find in Ireland as they require the % of meat on the label. Most Americans aren’t used to bead in their sausages so it never seems enough. Even my dear friends at Birr Castle buy them w high rusk content. Please try – people will love them as you have the flavour right – now you need more rusk! Thanks, Ted Conrad, Ft Lauderdale

I have been buying these sausages for years unfortunately that batch I received yesterday, were bad. Freezer burn and each sausage had 1/4″ of ice on them. I did call customer service and they are replacing the order. I just hope that they overnight the order as I wanted them for family that is arriving from out of town this weekend.

Agree, more rusk is needed – that would make this just like the sausages I grew up with. I last ordered a while ago and haven’t reordered as they were too dense. The ones you used to supply to ShopRite were great. They no longer carry them.

I’ve sampled Irish/English bangers from many places and this is the closest you’ll get to Ireland without going to a restaurant. One thing American grocers don’t understand is that the sausage should have the consistency of a hot dog on the inside with the casing of a traditional sausage on the outside. I even make them for my daughter’s friends when they have sleepovers. They love them the next morning with waffles!
